How did you get into cooking?
Nicholas McDermott:
I got into cooking at an early age, watching my mother cook all the meals from scratch at home with family recipes that her mother had passed down to her.
DWN:
Where was your first professional kitchen experience?
NM:
My first job was a chef in north London in a small family restaurant. I still remember the days of peeling bags of carrots, onions and potatoes for the mise en plus, then getting the chance to move up to different stations. DWN: What is your favorite dish to prepare?
NM:
I don’t have a set favorite dish to cook but I like to create new plates for future menus all the time.
DWN:
What is the best part of your job?
NM:
It has to be the mentoring of the chefs and seeing them move up in their own careers.
DWN:
Who is your favorite chef in Boston?
NM:
Boston has many great restaurants and chefs and it is a real pleasure to try as many as I can, but if I have to say one, it would be Barbara Lynch. Menton is a great restaurant!
DWN:
What do you usually make for yourself at home?
NM:
The question really should be what I make for my wife and two children. My wife likes anything cooked by me and not her so that could be any kind of comfort food. The kids on the other hand are the tricky ones.
DWN:
If you could dine with any three people, who would they be?
NM:
I would choose British Chef Marco Pierre White as he is the chef I always looked up to growing up, Liverpool FC soccer legend Kenny Dalglish my sporting hero and my mother so she could see what I have accomplished
